Happy Mid-Autumn Festival peeps! Yesterday, I was invited to a mooncake workshop organized by 1872 Clipper Tea Co. and The Baking Loft
The well-organized event was not only fun, but educational as well. After observing a demonstration by the instructor, we split into pairs and starting working on Clipper Earl Grey infused snowskin mooncakes. I teamed up with Fran from Frannywanny.com and we had a fantastic time working together.
For that distinct bergamot aroma, 1872 Clipper Tea Co. earl grey tea water was mixed into the dough used to make the snowskin, while earl grey tea leaves were kneaded into the lotus paste. Chopped apricots were also added into the lotus past for subtle bursts of sweetness.
Viola! Our mooncakes 🙂 This is my first time making mooncakes and was pleasantly surprised that it’s so easy. Many thanks to The Baking Loft for all the guidance and tips!
You may be wondering why Earl Grey was chosen out of so many possible mooncake flavours. Well, 1872 Clipper Tea Co’s Timeless Earl Grey not only tastes delectable, the blend also won recognition in the prestigious Great Taste Awards.
