Following a $17 million dollar makeover, Grand Copthorne Waterfront Hotel is proud to unveil their spanking new lobby and integrated dining destination today. Upon stepping inside, my breath was taken away the by centrepiece, a stunning cluster of Molo Clouds pendent lighting. The lobby’s stylish decor, by Designphase dba, embodies influences from both the East, and the West.
The integrated dining destination comprises of a bar, all-day dining buffet, and an Italian restaurant. A patisserie counter will be introduced in the following months.
Ease into the evening with creative drinks at Tempo, a dynamic bar specialising in mixology and spiritology. Sip on signatures such as Cheng Tng, Chendol and Kopi-O-Peng inspired cocktails, while enjoying the adventurous beat by a live DJ, who spins every night.
Locotempo 78 ($22): Cheng Tng-inspired, cheng tng-infused Gordon’s Gin, Cheng Tng reduction, hibicus tea, salted maple red date.
Locotempo 61($22): Chendol-inspired, with pandan-infused rum, malibu, coconut, gula melaka.
Locotempo 108 ($22): Kopi-O-Peng-inspired, corralejo blanco, tequila, kahlua coffee, agave corralejo blanco.
The hotel’s all-day dining buffet restaurant, Food Capital features live stations dishing out cuisine from around the world. Start light with some salads, followed by indulging in fresh seafood, before exploring the Western, Chinese, Japanese and Indian live stations. Complete the scrumptious meal with a la minute desserts such as Teppanyaki Ice Cream with Fresh Berries and Deep-fried Cinnamon Churros with vanilla sauce. Chinese Live Station: Laksa (so good I had 3 helpings), Braised Sea Cucumber with Lotus Root & Black Moss, Fillet of Cod with Ginger in Black Bean Sauce.
Japanese Live Station: Assorted Sushi and Tempura.
Dessert Counter: Coconut Mango Tart (raves!), Valhorna Passion Delight, Tropical Soup with Iced Jelly and Ivory Mascarpone with Strawberry.

Grissini, the Southern Italian Restaurant named after a breadstick, offers live antipasti stations, delectable charcuterie, appealing cheese selection and fine wines. Helmed by Chef Antonio Cocozza, diners can look forward to standouts such as Iberico Pork Collar and Atlantic Scallops.
