Cook & Brew Unveils New Menu For the Festive Season

It’s time for the merriest of seasons at Cook & Brew! Instead of rich dishes, this time, Executive Chef Aaron Foster’s new menu focuses on fresh clean flavours, with touches Asian influences.

We commenced with one of Cook & Brew’s signatures, Whipped Buffalo Milk Ricotta Cheese ($15), a platter of grilled sourdough, accompanied with a crowd pleasing spread made with whipped buffalo milk ricotta cheese and truffle honey. This is outstanding item is available during lunch, dinner and at the bar for peeps who are visiting for after work tipples.

Chef Aaron’s visually arresting Nova Scotia Lobster & Avocado Toast ($21) is a upscale spin of the humble breakfast favourite. Much effort is required to piece this lavish starter together; ingredients include fresh, succulent lobster from the Canadian province Nova Scotia, prized Osstera Caviar, an adorable sunny side up quail egg and Granny Smith apple. One of the best dishes I’ve locked lips with this year!

If seafood is not your thing, start with hearty Barbeque Turkey Meatballs ($16) where deluxe sized meatballs are enrobed in bourbon BBQ sauce. The cherry on top of the pie- a blanket of cheddar cheese sauce! It’s hard to resisted such an impeccable combination of flavours! Oh, and those crisps fingerling potato chips, yummmsss!

Eating healthy does not mean eating dully. Refuel during lunch with the Marinated Yellow Fin Tuna ($32), where Yellow Fin Tuna marinated with lychee, lime and ginger, lies on a bed of crunchy salad, with a handful of black peranakan rice thrown in. A single poached egg completes the refreshing and spicy Chirashi-inspired salad.

Fans of the sea and Thai flavours, the Canadian Prince Edward Island Black Mussels ($16 as an appetizer, $30 as a main course) is gonna rock up your ally. Plump mussels are sent rollicking in Thai Green Curry, with julienned green mangoes, tomatoes and chilli to enhance the flavours. Well-played!

I’m not one that crave for red meats by boy, this 1824 Farm’s Australian Beef Flat Iron ($39) is good! This uncommon cut of meat from the shoulder, although flavoursome, is known to be a bit tough. I approached the sliced steak with apprehension and but pleasantly surprised with tender meat. The accompaniments, hazelnut chimichurri sauce, grilled romaine hearts and roasted peppers, were excellent too. What a gem!

Meatarians who are feeling extra ravenous may take fancy in the generously portioned  Confit Australian Lamb Shank ($41). The lamb is cured for 24 hours with salt and sugar, air dried, and confit at 54°C for 36 hours . The result? Melt-in-the-mouth, luscious meat that falls off the bone effortlessly.

Leave some space for dessert! Peanut butter and chocolate is a classic combination that never goes wrong. Peanut butter ICE CREAM and chocolate cookies? Even better! Chef Aaron’s Peanut Butter and Chocolate Ice Box Cake ($15) arrived swimming in a pool of butterscotch sauce,  topped with toasted marshmallows and roasted peanuts. Sinful, but worth every calorie!

Prefer a lighter end to the meal? Check out the Strawberry Mousse ($15), a tangy dessert of rhubarb jam, fresh strawberries and finished with a heavenly lavender meringue.

Not only does Cook & Brew offer delicious fare at affordable prices, its vantage point at the 33rd level of Westin Hotel also boasts spectacular views of the Marina Bay. Highly recommended for pow wow lunches and romantic dinner dates.
